Artichokes are pretty neat...

I've really been working on trying new foods so I don't get bored and for more nutrients and such. In the past few years I've added quinoa, lentils, tofu, mangoes, eggplant and, recently my new love, artichokes. I've had artichokes in the past, in pasta dishes, in crab dip,(which gave a few of my family members and me a pretty bad case of food poisoning) and salads, but I had different opinions of how I felt about the artichokes in each dish. Recently my boyfriend and I have been going to a great local Italian place and he gets the chicken piccata which comes with artichokes, but he doesn't eat them, so I've been eating them and I thought they were great. Then we started going to a sub shop that has an artichoke and chicken sub which is amazing. Well, I haven't had either of those recently because they are pretty calorie heavy, so I decided to incorporate artichokes in my own meals.
Currently I'm using the marinated artichokes in a jar. Let's see, I put artichokes in my tuna, on my English muffin pizzas, in my salads and I even use the juice in the jar for salad dressing, now I'm craving artichokes, I bought some the other day, but they weren't in the bag when we got home, ugh, luckily I still had some left over, but I NEED them!

    They are one of my favorite foods and they grow them fairly local ( about 25 miles ).

    I also have a collection. I think this is an usual item to collect. I have a cabinet of ceramic ones. metal, candles, toothpick holders, trivets,potholders ect. emoticon

    I've never tried artichoke, other than spinach artichoke dip. But I LOVE that. You've inspired me to look up some recipes and give them a try!

    Glad that I could give you a new idea, my family and friends always act like my food combinations are weird, but you have to be willing to experiment, you never know what might become your favorite new dish. ]
    I admit, I'm kinda lazy, I've never done the roasted artichokes, I should definitely try, though.

    Some of those things sound just divine. I still like to just steam them and pull the leaves and dip in lemon butter or béarnaise sauce the best. Never thought of adding the canned (jarred) ones to my tuna. Sounds like you've given me my Friday night fish dish!!

    I have used the jarred ones, pour the oil into a sauté pan and use it to fry fish, usually cod, and then add in lemon zest and juice and put in the artichokes just to warm them at the end. I'm doing low carb so can eat lots of butter and protein. Wouldn't have it any other way!!
