I've made four SparkPeople recipes in four days!
To be honest, I made only one exactly according to the recipe and made some delicious substitutes to the rest.
Cucumber Salad in Vinegar
Substituted sweet red onions for white, Stevia for half the sugar, and rice vinegar instead of regular. The red onions are so tasty and colorful that we wonder why the recipe doesn't call for them in the first place.
Strawberry-Peach Freezer Pops
I made an ultra simple version with only two ingredients. I put a thawed bag of peaches in the blender and mixed it in a bowl with one pack of sugar free fat free white chocolate pudding. Instead of small paper cups, I used a muffin tin. Frozen fruit and a pudding mix has lots of possibilities!
Light Lemon Blueberry Donuts
AWESOME!! Next time, I may try orange zest instead of lemon. It did however take me more than the 15 min the recipe allowed for prep, but definitely worth it. MUCH tastier than the way too rich pumpkin donut I indulged in last week and maybe a quarter of the calories.
Peanut Butter Fudge Protein Bars
I've made these before and have done some variations. I used a little less protein powder and added a bit of natural coconut, molasses instead of honey, a teaspoon of instant coffee, and plain cocoa powder give this a richer dark chocolaty taste. I'm going to wrap and freeze to take to work.
One of my summer goals was to try more SP recipes, and I'm still at it.
