5 smallish eggplants, roasted
7 tomatoes of various sizes
Olives - green, coarsest chopped and kalamata chopped fine
Red pepper flakes
Olive oil
Fresh basil, oregano, thyme

Enough for several meals


Also made a big batch of polenta

    I must have been traumatized by ragout when I was a kid, because I've had a mental aversion to it ever since, but yours looks tasty, and I need to reconsider....

I DO like roasted eggplant, particularly with marinara sauce on it...
