SMOKED SALMON DEVILED EGGS
This recipe I from the web of the Barefoot Contessa and I have made this recipe numerous times to rave reviews. I didn't have to skinny it down because it is only 2 Weight Watchers points per half egg. It is an impressive appetizer to serve to guests, friends and family. I usually make 18 eggs and then I have 36 halves to bring to an event. I decorate each egg with either a small piece of red pepper, 3 capers, sliced black olives or a cress-cross of small chives. It makes a beautiful presentation on a large platter. I usually boil my eggs the day before and then the day of the event I make the filling. It is very creamy and rich so a little dab in the egg will do-ya. These deviled eggs can become addictive, so watch out how many you eat.
I have served the filling with snack crackers but it really is much better in an egg.
