So, most of you know I've been trying out some of Chef Meg's recipes and have asked about which ones I've tried and if they were good....well, here goes.
I have tried more that serve 4 or 6 or more so my DH & DS can get some benefit, too. So, recipes I've tried and love ( from the Spark Solution book):
Dijon-Herb Pork Tenderloin---yummy and easy, too!
Inside-Out Burgers ----I think I could have done better with finding some way of making them juicier and more moist with the los-fat meat.
Alfredo Pasta with Broccoli - Yummy and easy peasy!!
Baked Macaroni and Cheese - East and yummy!! DS was raised on mac & cheese ( I know, I was a hurry up mom) and he liked it fine!
Meg's Pan-Fried Chicken - Yup! Good, too!
One Dish Dinner: Chicken and Vegetables - Very good and easy!
One Dish Dinner: Southwestern Chicken and Rice - My all-time fav!! Makes more than you'd think! I ate a 1 cup serving and DS did, too. I still froze 8- 1 cup servings!
Great for go-to lunch or suppers!
Panko-Breaded Fish with Tomato Salad - If you like fish, you'll like this! I didn't care for the tomato salad, but the fish was dee-lish!
Quick Chicken Enchiladas - Very good, but it took me a long time to prep! But I am not skilled in the kitchen, so it took me awhile. I bought a rotisserie chicken and weighed out my amount and shredded it for this recipe. Sooo yummy!!
My fav. lunch of hers is the Curried Tuna. She suggests eating it like a sandwich or a wrap, but I just eat it right out of the bowl I put it together in! Love it!!
Not in the Spark Solution book, I did the ......(forget the name she gave it).....like little baked hand held Apple Pies or dumplings! Instead of using phyllo as she has, I bought canned croissants and made half the filling and rolled it up in the croissants! Had enough to do all 8!! I'm going to do this much more frequently!! No sugar added or needed!!

So here it is! I've had to type this 3 times now as it keeps disappearing! So I'll close now in fear of it going away prematurely!! Hope you try some of these!! Chef Meg is trying to teach me how to cook!!!

    mmmmmm you are making me HUNGRY! Those sound like some great dishes! I'll have to check some of them out! I'm glad that you are finding recipes that you love which are designed to be healthier!

    For the burgers, we use extra lean meat and then I always add a bit of extra virgin olive oil to add in a bit more moisture. It works great and while the olive oil is calorific, the fat that comes from olive oil is healthier and it is still waaay lower calories to add a bit of olive oil to the meat than to get a higher fat meat.

    That's awesome. I rarely use recipes; I make stuff up as I go, but then it's hard to measure when I'm tracking. You've just inspired me to take the time and follow a recipe. Maybe I'll get the cook book you referenced.
