I spent yesterday and this morning getting the vegetables prepped, soups made, and breakfast prepared for this next weeks meals. The fridge is stuffed to the gills and DD looks at it and says "Have fun"!
Today was day 1. Breakfast & lunch were whatever I could find. I wasn't ready for flax, vegetables & carrot soup. Dinner time I had the scheduled sautéed kale with winter vegetables & spicy coco sauce, with beet & carrot salad. I did add a small grilled pork chop for a little more protein and put the beet & carrots on some mixed greens with my homemade dressing.
I just finished packing my breakfast, lunch & snack for day 2. For breakfast I'm having the Blueberry/Pear Compote instead of flax granola. Lunch & snack are by the book. It doesn't matter how much I eat at breakfast (0630) I am famished by lunch (1200) if I don't have a small snack. I've added a fruit smoothie in for my 1000 snack.
We're on the holiday schedule at work tomorrow. That means I go in from 0630 to 1430 (2:30 p.m.) instead of 0800 to 1600 (4 p.m.). I'm going to try and get up at 4:30 and follow my regular morning routine. That includes eating breakfast and some journaling & me time.
