Green and Yellow Zucchini Salad with Basil and Almonds (photo)

The ribbons of zucchini will soften as they sit in the dressing (olive oil, champagne vinegar, lemon juice, salt, pepper).

I'll add some freshly grated Parmesan cheese and pepper before serving...

    REDISCOVERLLH - I have seen champagne vinegar at places like Whole Foods, but I got mine at a local fancy oil/vinegar shop.

You could use any light vinegar you like, though, such as a white balsamic, or a white wine vinegar of any kind.

You could also make this salad dressing with just olive oil and lemon juice. adding a dash of crushed red pepper is also an option.


I used about 1/4 c of extra virgin olive oil and 1/4 c of vinegar, and a couple Tablespoons of lemon juice this time.

    This looks delicious! Just curious...what is champagne vinegar, and where do you find it? Also, how much do you use of each? I'd like to try this. Thanks for sharing!

    yummy, great looking salad.
I love zucchini and use it instead of cucumber.
