Sounds silly, but there were so many of them I was feeling overwhelmed trying to process these things around my work schedule. Now I've discovered homemade tomato paste. I just fill my largest pot with cut up tomatoes, olive oil and salt and simmer for about 5 hours till it cooks down to this outrageous paste, which I then freeze in one-cup portions. Bring it on, 13 tomato plants, I'm ready!!!
