I have taken control of my... tomatoes

Tuesday, August 27, 2013

Sounds silly, but there were so many of them I was feeling overwhelmed trying to process these things around my work schedule. Now I've discovered homemade tomato paste. I just fill my largest pot with cut up tomatoes, olive oil and salt and simmer for about 5 hours till it cooks down to this outrageous paste, which I then freeze in one-cup portions. Bring it on, 13 tomato plants, I'm ready!!!

Have you ever tried homemade ketchup or chili sauce?
They both require a bunch of tomatoes and are amazingly different from their commercial counterparts.
I found the recipes in an old Ball Blue Book from a thrift store.
I gave several of my neighbors a half-pint for Christmas. One man liked it so much, he kept returning his jar for a "refill!"
Best wishes! emoticon

This is the first year I didn't put any tomatoes in, and I am sorry. Enjoy your wonderful fresh tomatoes.
