Sweet potato lentil strata salad

Red onion - 1/4 c.
Sweet potatoes - steamed, 1-1&1/2 cup chunks
Lentils - cook with favorite spices, ~1/4 c. uncooked per serving
Arugula - 1-2 c.
Granola - pick your favorite brand or cereal, add 1/2 c.

Add ingredients in layers to tall cylindrical tupperware container or mason jar. Add lemon vinaigrette dressing before mixing and serving.

Last week I batch "cooked" enough salads for every day of the work week and stuck them in the fridge. So far, things are going well! The salads have kept well over the course of a couple of days, and the ingredients did not get too soggy or wilt. I'm being careful about how I layer the ingredients before I store them, which helps.

I have a work schedule which usually keeps me too busy to think about eating until the allotted time (I think about coffee all the time though...). It's interesting that there have been a couple of days in the middle of the week where I was absolutely starving by lunch time! By those points, I'd kept the same meal eating patterns for a couple of days, which means I need to be more thoughtful about switching it up and adding protein rather than following the same routine for convenience.

Off to find a new recipe!
