Good for you! I crave them often as well. I love to throw some kidney beans in it for protein and maybe a hardboiled egg.
There are just so many ways to mix up and change up a salad depending on what leftovers you have... or what else you are craving. You can throw almost anything on a salad.
I also have a more-fattening Taco Chili Salad. I crush up taco shells or tortillas and add them to the salad. Cheese, or course, and Chili is added (watch the sodium content), throw in some Fat Free Sour Cream as a dressing and you have a hot salad that will melt in your mouth! I reach for these when I have had a day with no to low fat and need the protein and carbs to keep moving. LOL
