Sirloin steak, roasted garlic vegetables and sweet potatoes.
Lunch was ready just after 1pm. I didn't want to start cooking the steak till DH was actually inside - I dislike over done steak! It was marinated in a little red wine, olive oil, steak spices and fresh garlic. Sauteed with some mushrooms on the side.
The veggies were done in the oven - butternut squash, zucchini, yellow squash, carrots, red onion, broccoli and kale tossed with fresh garlic and olive oil and italian spices - I love the smell of fresh rosemary and basil.
The sweet potatoes were cut in rounds, brushed with olive oil and sprinkled with italian spices and some sea salt and sauteed in a grill pan.
After dishing up I put some parmesan cheese on the veggies, a glass of red wine on the side and that was lunch.
We sat and talked for a few hours at the lunch table and when I was ready to do the dishes and thought it was only 3pm, it turned out it was nearly 6!! It was lovely to just sit and relax and talk about everything under the sun. A great Sunday afternoon!
