Eat like a vegan

Made curried quinoa for dinner while husband and kids had hotdogs and pasta salad for dinner. Moosewood's new classics are some great recipes. I also made black bean salad, hummus with plain yogurt to just have on hand. I need those healthy snacks. The scale is not my friend right now :)

    Vegan amongst carnivores. I have never been a huge meat fan. Slab of beef or pork- yuck! I do like chicken and eggs. Challenging in a house full of men but boys love black beans and hummus. Planting the seeds I suppose!

    I love Moosewood recipes! Their acorn squash with sunflower seeds casserole is so yummy!

    Wel I don't know about the scale, but it sure sounds like you are making the best food choices possible! I tried going meatless - made it for 30 days before I caved. I don't know why - not really. I don't even like meat. Somehow it's just a necessary evil in my life. I need to give it another try. . . soon.
