Pam's Delicious Mushroom Kale Fettuccine Delight
Preparation Time: 15 minutes
1 package Organic Mung Bean Fettuccine, Explore Asian brand (see note)
1 shallot, finely chopped
1 clove fresh garlic, minced
2 cups mushrooms sliced, preferably shiitake, miatake, oyster
10 sliced grape tomotoes, halved
1 teaspoon oregano
1 teaspoon basil
2 tablespoons nutritional yeast
2 tablespoons unflavored almond milk or coconut milk
2 cups baby kale, chopped
1/4 teaspoon dried red pepper flakes
Cook Mung Bean Fettuccine 6-8 minutes to al dente, drain and set aside.
In the same pot, heat 1-2 tablespoons water over medium heat. Add shallot and garlic and saute for 1-2 minutes. Add sliced mushrooms and saute for 4 minutes or until mushrooms soften and liquid is evaporated.
With the heat on low, add in tomatoes, oregano, basil and cooked mung bean fettuccine.
Stir nutritional yeast and milk together, add to pot. Cover & heat through for 2 minutes.
Add chopped kale to pot, cover pot to quickly soften for 30 seconds. Season with hot pepper flakes.
