Pam's Delicious Mushroom Kale Fettuccine Delight

Serves: 4
Preparation Time: 15 minutes


1 package Organic Mung Bean Fettuccine, Explore Asian brand (see note)
1 shallot, finely chopped
1 clove fresh garlic, minced
2 cups mushrooms sliced, preferably shiitake, miatake, oyster
10 sliced grape tomotoes, halved
1 teaspoon oregano
1 teaspoon basil
2 tablespoons nutritional yeast
2 tablespoons unflavored almond milk or coconut milk
2 cups baby kale, chopped
1/4 teaspoon dried red pepper flakes


Cook Mung Bean Fettuccine 6-8 minutes to al dente, drain and set aside.

In the same pot, heat 1-2 tablespoons water over medium heat. Add shallot and garlic and saute for 1-2 minutes. Add sliced mushrooms and saute for 4 minutes or until mushrooms soften and liquid is evaporated.

With the heat on low, add in tomatoes, oregano, basil and cooked mung bean fettuccine.

Stir nutritional yeast and milk together, add to pot. Cover & heat through for 2 minutes.

Add chopped kale to pot, cover pot to quickly soften for 30 seconds. Season with hot pepper flakes.

    How did it taste? As we approach fall, I will be cooking more. Have lived on raw fruits, veggies and salads all summer. But soups and cooked left overs work well for school lunches for me. They eat faster than salads. The minutes for lunch are limited,

    Thanks, I think I'll give this a try tonight! DH, the meat eater in the family, is out of town so dd and I are on our own. I'm always trying to get the mushrooms into my daughter. I don't have access to the mung bean pasta but I do have two packages of the Hungry Girl Shirataki (tofu) noodles in my fridge. This will be perfect!
