BREAKFAST


Homemade corn fritters using 1 fresh ear of tri-colored corn, 1/4 cup coarse corn meal, 1/2 cup unbleached flour, 1/4 cup banana flour, baking powder, 2 TBS. ground flaxseed meal, 1 cup fat-free milk, and lightly fried in unrefined organic coconut oil.



Served with 1/2 fresh mango and diced crystalized ginger and spoonful of avocado.


LUNCH


tuna loaded with minced celery and home grown red onion. No dressings


Then a trip to garden to pick a freshly ripened Mortgage Lifter Heirloom organic tomato, some lettuce leaves, habanero pepper, and basil.


Fresh whole grain bread wrapped up to take to the boat. A large juicy peach and 8 oz. of organic lemonade will complete the lunch.


Packed in a lunch bag, I will have my healthy lunch onboard to do labor intensive work.

I have NO TIME to sit on the food tracker. I have to get going but I know that these two meals are ridiculous and no one could ever lose weight eating this much food - I don't care how much hard, grueling work is ahead of me on the boat.

6:15 PM back from the boat. Lots of hand bilge pumping out a flood of rain water from cockpit and cabin. Had to wipe it all down and get inside cabin to do some work.

DINNER: (prepared yesterday - made enugh for 4 servings)


eggplant, tomatoes, red onions, jalapeno peppers, basil, oregano, thyme, ricotta cheese, panko breadcrumbs, cracked pepper, Romano cheese.
