(I guarantee the picture doesn't do this justice) This is my current favorite stew recipe! The base is pureed acorn squash and mango. Then I added cubed butternut squash and extra-firm tofu, black beans, brown/wild rice, shaved carrots and broccoli and red cabbage, spinach, and peas. I spiced it with curry, cumin, chili powder, and tarragon. At first it's sweet, but then it has a spicy kick to it. Soooooo yummy! I'm proud of my new invention!
