Quickie update...

Monday, August 12, 2013

Hi y'all!! I'm still plodding away. I'm a little bit sad this week... I dropped off my DD this weekend with my parents for 2 weeks. Her summer camp is over; but school doesn't start yet. DH and I don't get quite that much leave, so my parents help us out. We're lucky! Today was my first day coming home to an empty house...
DD is usually with me coming home from camp or home before me during school. It's so strange. I let myself wallow a little bit; but I'll be okay. At least she texted me today to say she missed me. It was sweet!

I'm REALLY enjoying the fresh veggies. We're having fun coming up with lots of new ideas. One of our new favorites is to take some heirloom tomatoes, onion and sweet grilling peppers, grill them, then chop them up like a salsa. It was fabulous on a burger and I'm having it on my turkey sandwich for lunch this week.
It's so easy and delicious!

Tomorrow night we're grilling fresh squash and heirloom tomatoes cut up and stirred in to sauce with whole wheat penne pasta. After that I'm tackling the kale! LOL!

I'm still addicted to the doughnut peaches... I even substituted one of my items (mushrooms - not that I don't like them, I'm terribly allergic to them) to get some extra peaches this week!

Hope you all are having a great week! I've got to go put my groceries away. Spark on my friends!

I understand how you feel, but do try to see the good side of it.

I love what you are doing with the veggies! I, too have been grilling, roasting. putting on burgers and with eggs, etc.
Do you like eggplant? I have so much from the garden and fixing it in endless ways.
I need to try grilling peaches, while we have so many.

Have a nice Saturday and I bet you will be hearing all sorts of stories from your DD, when she gets home.

Glad DD is having fun with grandparents. Important memories being created there. Know it's hard on you tho. You guys do a lot together.

Glad you are enjoying your veggies. I still haven't tried those peaches. Need to work on that.

    Keep going!
