The old saying is "If life deals you lemons - make lemonade". Well, I made a lemon meringue pie instead - literally. To be honest, life hasn't dealt me lemons. I have a wonderful life and have been extremely blessed. I am so grateful for all God has given me. I love my husband so much. I have a terrific mother healthy at 82. I have two incredible grown sons that are doing well.
I have lost 30 pounds in this past year since joining SparkPeople. I haven't reached my goal of 50 pounds as quickly as I had hoped but I haven't lost my motivation and will keep on sparking. I've started going to an exercise class twice a week which will help. I hope to reach my goal by the end of the year.
Back to the pie: I made it because it's my sweetie's favorite dessert and we're celebrating our 7th anniversary. It looks really fattening - because it IS really fattening. I made it all from scratch including real butter in the pastry and squeezed real fresh lemons. Actually it does have something healthy in it - three large eggs. But oh! lots of sugar too ! I haven't calculated the calories in one piece because I really don't want to know. We didn't cut into it last night probably because we were drinking wine (and busy doing other things Ha!) so I served it for breakfast this morning.
Best breakfast I've ever had - if I do say so myself.
The eggplant parmesan I made was fantastic too. That was super fattening as well but I rationalized it that our 7th anniversary only comes once in a lifetime. I served fresh steamed broccoli with it - Hey, something healthy ! (Johnny put cheese on his but he's super skinny and needs to gain weight).
I didn't realize until we sat down to eat that is was a "vegetarian" dinner. And we're not vegetarians. But it was great. A night to remember.
