Planning this weeks menu

I am getting back to planning our meals again....
I found a new Chicken Apple salad that sounds very yummy and easy for this time of the year....I can't say it has been hot here because it hasn't.....it's been really very nice weather wise....things are getting in to a routine in the new house..

We are having a few friends over this Saturday for a cook out....steaks and strawberry spinach salad and a huge veggie platter....any ideas for a light yummy dessert.....


I am going to be starting the Book Shades of Hope ....this is based on the food addiction program that was on for a few episodes....hoping it helps me get to the bottom of my food addiction...can I learn other skilled to help me cope with life....

    It always feel better for me when I plan my menu because I get into trouble on my own,lol
    Thanks for the info on the book Shades of Hope I don't have a television so I don't always hear about something like this topic covers. Keep us posted on how your cookout goes for you.

    Sounds like a plan! I think fresh fruit would be great. I like taking a watermelon, hollowing it out and then using it to put the rest of the fruit in. Makes a nice display of healthy fruit. Another thing I really enjoy is an old WW recipe.

    8 oz tub cool whip (FF or SF or regular, your choice)
    1 package jello (I use SF)
    1 6 oz yogurt (I use FF)

    You nix the jello in 1/4 cup boiling water, add it and the yogurt to the cool whip and pour in cups or a graham cracker crust.

    I enjoyed experimenting with flavors...strawberry jello and banana yogurt or orange of both to make like a creamsicle , etc.

    Enjoy these wonderful meals that you have planned out. I think that I would make a nice watermelon bowl for dessert for your guests. The meal just seems to call for it. emoticon

    Kitt, good for you with the food planning and getting into a routine in your new home. I agree with Nadine on the angel food cake, whipped cream or cool whip and strawberries. I used to make this for my mom for her birthday since she was diabetic. I would get the sugar free cool whip. It's light and delicious.

    Let us know sometime what your opinion of the book is. I remember her (Tenney) from Ruby's show. I have many to read before I will consider getting her book.
    Dessert: I used to serve
    angel food cake, I used pressurized can of real whipped cream (I am not a fan of Cool Whip), and sliced strawberries. Since you are already having strawberries in your spinach salad, perhaps you could use a different berry. OR use a medley of berries (blueberry, raspberry, strawberry, etc). Fresh or frozen is good.

    The book sounds interesting, I hope you'll tell us more about it. As a bookworm I always want to read about this kind of thing!
    A light dessert - maybe a frozen banana with other fresh fruit (cherries maybe), blended together with a little soy or almond milk. Gives a nice dessert that resembles icecream, but much healthier, and very easy to make.

    For dessert I suggest one found here on Spark People Recipes. It is an Updated Apple Cheesecake. My family loves it and I make it Cherry instead of apple sometimes. Yummy!

    I love strawberry spinach salad. I like to put sunflower seeds or sliced almonds on mine with a raspberry vinaigrette dressing. I don't know what kind of desserts you make or like. My mind immediately went to fresh fruit. How about dishes of cantaloupe with a single scoop of vanilla ice cream? Or angel food cake with a fresh fruit topping? A fruit salad? Lots of possibilities.
