Finally.... after months of craving it, I finally got to have my Chicken BBQ dinner. It was divine!
Many of our local Fire Halls do Chicken BBQs throughout the summer. For $8 you get
1/2 a chicken
Not a bad deal when you think about it. The chicken itself is slow cooked over a large open pit. There is no bbq sauce on it. The smoke from the charcoal is what gives it that awesome flavor. They also baste it with a solution of vinegar, water, butter and pepper.
The baked beans and applesauce are just out of a can... nothing special there. The roll is just a standard white dinner roll... again, nothing special.
I always peel the skin off of my chicken and just eat the moist, melt in your mouth meat. Just thinking about it makes me want to go eat more of it!!
The 1/2 chicken (which actually isn't all that much meat once you get it scraped off the bones) was enough for my lunch today, a snack, and lunch tomorrow. I had a few beans, but they are pretty much untouched, and the applesauce is the full sugar kind that is just way to sweet for me. I gave the roll to my co-worker because I don't want to fill up of a crappy roll when I have all of that chicken goodness sitting right in front of me!
Also, as another special treat, my co-worker baked zucchini bread. Since it is so rare that I get to eat homemade zucchini bread, I helped myself to a small slice.
I strayed a little bit off plan today, but that is life. I am not stressing about it, because at best, I get to eat those foods once a year. I may have had a little more chicken that my usual serving, and I may have taken a few bites of chicken skin, but so what? It isn't going to kill me once or twice a year. If I were eating that 3 or 4 times a week, then it would be a problem.
Tomorrow is PC Fit Class. I really want to make the 10:00. Mostly because after I am done volunteering at the library, I want to come home and do laundry and chill out. If I don't get up, I don't get up, I can always take the evening class.
All in all the weekend was pretty decent. I worked for most of it. For those of you who don't know what I do, I work in the operations department for a trucking company. I guess you can say there is never a dull moment.
