It's ironic that I was without an oven for almost two years, and now I've got one, I cannot bake all the high calorie, gluten free goodies I've collected recipes for! So many new recipes have come out with much better ingredients than rice flour, recipes for pie crusts and cookies that people rave about, and here I am saying "Nope!" I'm determined to hit my goal before I start baking. In the meantime, I'm compiling a stack of recipes that sound heavenly, and a grocery list to go along with them. My husband is going to flip at the grocery bill muahahhaha!
Seriously, the flours needed are a bit spendy. That is also a good deterrent to keep me from just going nuts baking.
I found a delicious gluten free pancake recipe! Problem is, when I make them, I eat them like a piggy. I can't resist, I over stuff, so I will not make them. It's harder to resist them than it is to resist ice cream!
In the mean time, I'm enjoying the heck out of trying all kinds of gluten free vegetable dishes! yum!
