I've been craving sweet all week, but it's been so hot in the house I didn't dare bake myself birthday cake. Well, it was cool enough this morning that hubby asked to turn on the space heater...hah! yay oven!
Started my kitchen play time trying to make Meg's Quinoa pizza dough. Think that one was a flop. The regular one did quite well though. Then I had a half cup of quinoa flour left over so I decided to make cookies, went for oatmeal, but couldn't find any that were under 100 cals per cookie. SOOO I busted out the old substitution chart and got to work. Swapped out half the butter for plain greek yogurt and the white sugar for pumpkin puree, reduced the brown sugar by half (though added it back in at DH's request for cinnamon chips) and then tossed it all in the food processor and let it work it's magic. Ok, now I have to go work off the 3 that I had and down some water. I'm roasting.

OH!! PS- for those of you who were wondering, Mike is doing well. Knee is healing nicely and we're hopeful we'll be heading back to work about the same time. Hannah (our little friend fighting cancer) is now 5 days past what the doctors gave her and she's at a lake having a blast playing in the water....think the convoys to raise money for her medical bills are going to be the second week in September. The WA trucks are meeting at exit 68 on I5 and the OR trucks are meeting somewhere south of Salem and we're converging on Vancouver. Gonna be an awesome day....it's amazing to me to watch all of these big, burly loggers and truck drivers pulling together to support a little girl. Melts my heart.
