Back on the 6 Week Plan

I went on vacation in June and have not been able to get back on track since then and that was over a month ago! I gained 10 out of my 18 pounds lost. I found it very difficult to eat ETL on vacation. We were vacationing for two weeks. It is very hard to eat out 3 times a day and find things that are vegan!! So here I am again a month later dissapointed with my weight gain and feeling bloated and gross.

I started reading ETL again today to motivate myself. I made some delicious vegetable soup and chopped up some salad greens.

Looking back, what started my descent was salad dressing. I said to myself, "I can handle ranch." Well, it is a trigger food for me.

For dinner I am going to have some bean soup. I downloaded the Vegan Delish app from the CarrieOnVegan blog and will make some dressings from that.

Starting weight: 160 with a goal of 150 next month.

    I used to be a ranch addict! Here is a dressing I've been using:

4 Tablespoons nutritional yeast
3 Tablespoons balsamic vinegar
2 Tablespoons Dijon mustard
1 Tablespoon grade b maple syrup (or agave nectar)

Mix in the blender. This will dress 4 or 5 salads. I just drizzle it on and it coats pretty good and has a nice flavor.

I'm worried about traveling on the vegan diet...I haven't had to do it yet. We have a trip planned for Labor Day and I'm pretty nervous about it.

Glad you've come back to the vegan way!
