Day 2

A good day! I came up with some awesome low-cost recipes using ingredients I had on hand.

The first is a makeover of a Chef Meg recipe, Slow Cooker Creamy Italian Chicken: recipes.sparkpeop

I use goat cheese instead of cream cheese, and a different brand of italian seasoning (lower sodium), but it's still really easy to make. I also added 6 cups of raw baby kale to the pot for the last hour of cooking, and served the chicken over a roasted eggplant stuffed with quinoa and satueed onion. I have SO MANY leftovers, it's awesome and delicious.

I also put together a recipe for Primal Tuna Noodle Skillet Casserole, using brown rice noodles:

I updated my Sparkpeople nutrition tracker with the new feature, so it counts calories burned ... this is going to help keep me motivated for tracking my calories and activity. I'm excited! I set my goal up to lose 1.5 lb per week between now and the end of the year (319 by Dec 31st).

I tracked everything, stayed in my calorie and macronutrient ranges, and walked today. Go me!

Yoga/Strength Training: 1/3

Update: Goat cheese was a bad idea for me.. it made me retain water due to lactose intolerance... so I will leave the rest to my bf.

Yes, I've learned the hard way about goat cheese. I'm not lactose intolerant, but the high sodium content of the goat cheese always triggers me to eat too much of it. Then I end up retaining water. But it's so good on beets with dill!
