Weekly Recap (W/E 07/20/13)

Wow, this one was a LONG week for me! I had to work Saturday, which I normally have off, so I was a little thrown off this week. I hate working Saturdays. It throws my schedule/routine all out of whack.

Anywho, here's my weekly recap!

Fitness Minutes Tracked: 30

Went to the public market and bought lots of healthy produce! Also bought some fresh herbs and planted my own indoor herb garden! I love having fresh herbs in my kitchen! Went to the in-law's for dinner and had coconut chicken with asparagus and skipped dessert. emoticon Went swimming in the pool for about an hour and did about 30 minutes of actual swimming.

Went grocery shopping for the week and bought all of the ingredients to make some pre-planned meals for the week. Came home and cut up/portioned all the fruit/vegetables for the week to take with me to work. This has proven to be a very successful tactic for me thus far and a big contributor to my 12 successful days in a row of no "cheat" meals. I also tracked my breakfast and snacks for the rest of the week, which helps me A LOT. All I have to do is eat!

Made Lemon Asparagus Couscous Salad with Tomatoes to eat during the week!

Made Turkey Sausage Pasta for dinner!

Had leftover Turkey Sausage Pasta for lunch and made Turkey Taco Lettuce Wraps for dinner after a 90 minute softball game. We lost our game and the heat index was 105 degrees--we were dying! I was able to refuse ice cream after, which was a HUGE victory for me!

Made Skinny Italian Turkey Meatball subs for dinner! This was a really quick and easy recipe. I saved some leftovers for lunch the next day and froze the rest for one night this week.

Had leftover Skinny Italian Turkey Meatballs for lunch and made Skinny Chicken Fajitas for dinner. They were sooooo good!

My parents and sister wanted to come take us out to the ice cream shop right across the street from where we will. Guess what I ordered? NOTHING! I took some Berry Chia Pudding that I made earlier in the week down with me and ate that while everyone else indulged in ice cream! It felt soo good and I didn't feel like I was missing out on anything!

Had to work in the morning, but took a half day. Came home and relaxed for a few hours then made Quinoa and Spinach Patties and Zucchini Tots to take to my parents' house where they had a small cookout. They had hot dogs, hamburgers, and potato salad on the menu, so I decided to bring my own food so that I could stay on track! Mine actually looked more appetizing than their food! Mine was full of color and theirs wasn't. Their potato salad was LOADED with mayonnaise. I had brought some leftover Lemon Asparagus Couscous with Tomatoes Salad with me. It was so yummy and I was so proud of myself!

So, overall this week went very well! Tonight I will be marking off day 12 of no "cheat" meals!! Woo hoo! I have had multiple opportunities to veer off track and I was able to resist each one! Here's to a good week next week!
