Raw food meal 1

As part of the Season of the Beast challenge I am part of on my Sunny Gals team we are supposed to eat 3 raw food meals this week and post a blog about our raw meals. I love to eat raw veggies. Most of the veggies I eat are raw, including a lot of things people ordinarily cook. I do eat some cooked veggies but most of them I prefer raw. (however potatoes are not one thing I want to eat raw that much. Usually if I eat potatoes, it's sweet potatoes baked and put some Laughing Cow cheese on them instead of anything else.)
So this is my first raw food meal post for the week. I'm really not that wild about taking pictures of my meals and posting them but I will for this challenge.
This is my lunch today. Some raw cabbage, some raw kale, a few grape tomatoes, and a serving of raw pistachios.
I like pistachios because they are healthy. I love nuts period. All kinds. I have a hard time not eating just a few. But according to the nutrition information I found 47 pistachios is one serving and 152 calories. And if I eat them in the shell I suck on them and it takes me a while to eat them. If I eat them just unshelled, I can go way to far. But taking my time with the shells takes me longer and helps satisfy me more.
Hope this didn't bore you LOL. Hoping to go hiking in a little while, if the rains hold off till later this afternoon. It's a beautiful day here. Recent rains (our monsoon season) have cooled it off some and made things fresh and little flowers starting to bloom out in the forest. Have to be careful where I go though to stay away from creeks because of flash flooding but there are lots of places around here where I can avoid that.
