Seafood mix, cranberry, broccoli, focaccia FAST
Introduction
Hungry, need a fast brunch with flavor fine restaurants would be proud of?
Minutes to Prepare: 5

Ingredients
*Imperial Stick Margarine, .3 tbsp
*frozen mixed seafood-shrimp, calamari,mussels, thawed 4 oz
*Frozen Broccoli, .75 cup
*Spice, Basil (dried), 2 tsp
*Cranberry Juice 100% juice, 2 oz
*New York Style Focaccia Sticks, Four Cheese, 30 gram(s) (actually used what they call bread sticks but like little loaves of basil cheese focaccia-this is only thing close that Spark had listed. So I used like 1/4 of one of the little loaves split open)
*Imperial Margarine, Stick, .3 tbsp (remove)


Tips


Directions
Note that most of the cranberry juice 'cooks off'.
On med/high heat melt margarine or butter and put in broccoli, cook a minute or two, add seafood mix, top with basil. Now put the bread, split for toasting, in the toaster. Turn mixture in the pan up to high, put in the cranberry juice. Toast finishes, lightly butter. The mixture in the pan should be done (liquid cooked off), now place open face style on the focaccia toast-(I used cheese basil). YUM.

Okay for a midwesterner who wasn't brought up around seafood? I thought it was exotic once going to St Louis to Nantucket Cove restaurant as a kid and enjoying Lobster Newburg or the Round Table in Collinsville for Deviled Crab :) We caught bluegill and sunfish, and grandpa would catch that and perch, smelt, and northern pike...rare treat when he'd use the smoke house for northern pike (tastes like a freshwater cod)...thinking of the smokehouse...ooh now I'm in the mood for some of that sage, maple, venison summer sausage.....ouch :)
