GF: Day 3

I've been toying with gluten-free living for a while now, but due to some health news last week (and then earlier this week), I've pulled the trigger and went totally GF. Today is day three of hardcore no gluten whatsoever. In some ways it's easier than expected; in other ways, it's more difficult. I'm trying to eat up what I have and then make a big gluten-free grocery haul this weekend. I'm going to try and plan some meals next week, so I'm not just cobbling weirdo "at least it's gluten-free" meals out of what I have in the fridge. :)

I spoke with a former co-worker who went gluten free four years ago. She told me that she noticed a decent change within a week (for her, it was fewer migraines); after about a month she noticed more energy and less brain fog. I recall her losing weight and I guess that was part of it, although she mentioned with all the gluten-free products on the market, you can actually gain weight. (Many GF products add fat to enhance flavor.) I'm not really interested in those right now. Rice seems to satisfy me when I am craving a grain.

From what I've read, it can take about six months for one's body to adjust, and although it can take longer, six months seems to be the "milestone" measurement. We'll see! I'm just very proud I've made it to day three! :)

    Good for you! Fortunately, there are many more recipes available now so you won't have to eat "weird stuff." I have heard that too many of the "gluten free" products are not a good idea.
