I had some leftover beef pot roast and found a yummy recipe to turn it into a casserole! You just add low fat cream of celery and 1/2 cup of milk, tons of veggies, some potatoes, the pot roast and all juices... the result?! DELICIOUSNESS!! I was a big fan.
It took a lot of willpower not to have seconds (but I recognized it would have purely been cause it tasted so good, not cause I was still hungry).
I'm feeling pretty proud of myself :)
Tomorrow is my fiancee's birthday and I'm very excited to spend the evening celebrating with him - a little indulgence WILL BE had, in the form of going out for dinner & birthday dessert (no double meaning! I am literally excited for dessert)
