I've taken this Eat to Live Journey 3 other times. And while I am still learning my way around what healthy eating means to me, and how to make it work, I can honestly say I'm enjoying the planning, the cooking, AND the eating this time.
Only prepping the salads was involved today. The hot parts of the meals only needed reheating. So going to the Wellness Center to find out how they did their tabata workout in the pool was possible, though it was still difficult getting there by 8:30. I must say it was quite a workout. If I'm still alive Thursday morning at 8:30, I can do it again!!
Tomorrow, IF I can get myself up in time, I'm meeting some women from the class at 7:30 . :D The plan is to walk along the river.

L: Spaghetti Squash, Vegetti Sauce, cocoa ball
Very stuffed after this meal. Should have stopped sooner. I think that was a problem because i didn't have a salad first since the main dish was chocked full of veggies. And I had crunchy cooked the spaghetti squash. I need to be more aware of how full I'm getting, especially if I DON't start with a salad.
