Marvelous Monday

I took today off work because I worked all weekend. I got up at 4:30 to head off to the gym for a rousing game of racquetball with Molly, then came home and had breakfast.

After breakfast, I put together the minutes from last week's board meeting and sent them off to the board. (What a bunch of dysfunctional jerks!)

Then I changed out of my workout clothes and Rich and I headed to town to buy groceries. I got some cherry tomatoes on the stem that I can hardly wait to eat for a snack tomorrow! emoticon I have seen regular tomatoes on the vine before, but never cherry tomatoes.

After buying groceries, we went to our favorite Chinese restaurant for lunch. I was starving by then, so I pigged out on Mar Far chicken instead of my usual green beans with garlic sauce. Of course, that was accompanied by egg flower soup. I only eat a few bites of rice, not more than 1/2c, so that isn't too bad. And of course I ate my fortune cookie! (Only 40 calories in that!)

A friend of mine is the editor of a local weekly newspaper and the reporter for her headline story didn't get her story this week so she was in a panic. She asked if I had attended the event, but since I hadn't I suggested that she write about the one that I attended for her headline story. She suggested that I do so. emoticon Sooooooo, today in 1 hour, with no notice, I wrote a 2/3 page article for the weekly paper!

This evening I packed my clothes for work tomorrow and packed my lunch and snacks. I have the aforementioned tomatoes, baby carrots, Bing cherries, fat free hotdogs and a thin bun.

My coffee is made for my iced coffee. I use Folger's Mocha Swirl coffee in my Keurig. I then add dry creamer and sweetener to taste. It chills for several hours or overnight, then I pour over ice. I often add a squirt of Hershey's Sugar-free chocolate syrup to it. I get a 32oz glass of iced coffee for about 50 calories, hundreds less than I would get from a local java hut!

I will probably head to bed pretty soon, as 4:30 comes darn early! Have a great sleep and I will talk with you again tomorrow!

    I love your iced coffee recipe. Now that it is hot I have been making my own at home instead of having it hot.
