I've lost a day somewhere, but this starts the 3rd week of the 6 week challenge.
It was a lovely day here in NC. I had breakfast on the porch, did some SP work, and then drove in to the Wellness center and started a Water Arthritis class. I had done it in January and it seemed to fit my level back then. But today, nothing got my heart rate up so I moved to the deep end and did my usual workout for an hour. Then I showered and walked a little over a mile along the river and had lunch on a bench. Nice!! And the rain held off. The clouds kept the temp down and a cool breeze blew away the humidity.
I created the delicious tomato sauce after lunch for my dinner. That will figure in to tomorrow's leftovers. I need to go make my Chocolate monster dip for tomorrow's breakfast.

The tomato sauce was delicious!! Canned tomatoes without salt, I drained the cans through a strainer into the saute pan with processed celery, kale, mushrooms, onions, cocoa and other seasonings. Then I processed the tomatoes and added them to the pan and simmered about an hour. The cocoa really added a lot of flavor!! Can't wait to try it with spaghetti squash tomorrow.
