ETL Challenge Day 15, or something like that!

Monday, July 15, 2013

I've lost a day somewhere, but this starts the 3rd week of the 6 week challenge.

It was a lovely day here in NC. I had breakfast on the porch, did some SP work, and then drove in to the Wellness center and started a Water Arthritis class. I had done it in January and it seemed to fit my level back then. But today, nothing got my heart rate up so I moved to the deep end and did my usual workout for an hour. Then I showered and walked a little over a mile along the river and had lunch on a bench. Nice!! And the rain held off. The clouds kept the temp down and a cool breeze blew away the humidity.

I created the delicious tomato sauce after lunch for my dinner. That will figure in to tomorrow's leftovers. I need to go make my Chocolate monster dip for tomorrow's breakfast.

Here's to your health!!

Bravelute

Menu:

3B Micro salad with cherries, pear, blueberries and Sprouted Whole Wheat bread with almond butter.

7L: Blue Brussels sprouts leftovers, and the other half of my breakfast salad, and 2 makeover Possibility Cocoa Balls

9 D: 2 makeover possibility cocoa balls, Tomato sauce with lots of veggies on Lundberg mixed grains

The tomato sauce was delicious!! Canned tomatoes without salt, I drained the cans through a strainer into the saute pan with processed celery, kale, mushrooms, onions, cocoa and other seasonings. Then I processed the tomatoes and added them to the pan and simmered about an hour. The cocoa really added a lot of flavor!! Can't wait to try it with spaghetti squash tomorrow.

I happened upon your blogs the other day and you are so enthusiastic, uplifting and consistent with what you are doing. I applaud you, lady. But I have 3 questions. What are cocoa balls and how much chocolate do you put into the tomato sauce and is the chocolate powder or liquid? I use cocoa powder in a Mexican dish not sure if it is the same thing. Sending skinny vibes your way.

They say that cacao balances the acidity of the tomato. It has a definite taste in the recipe. I don't mind it (adds a bit of diversity to cooking), but some people just can't get over the difference it makes.

I went into the water today too. I absolutely love the feeling of being in the water.
