I am making plain pasta sauce today to be used in a number of my Italian dishes. This is the base for my meat sauce, my sauce for lagasina eggplant pharmisain and most of my dishes. I will use some for a veggie sauce for pasta tonight, I will freeze it in portions for other dishes. I am sure that Hubby will want a meat sauce soon so I will take some out of the freezer and put in my Italian sausage and add a few other things. I roasted some plum tomatoes Friday from an Italian recipe that will be in my sauce for tonight. We always use fresh graded cheese never the stuff that comes in a shaker. The fresh stuff has so much more flavor and you do not really use as much as the cardboard kind.

I found some salmon in the freezer that I forgot we froze about a month ago and moved it to the top. It will be on our list this week along with a salad and some type of fresh veggie.

One of the other vendors brought us a long Italian squash and she told us how to cook it and to make sure that we peel it as they skin is tough. Hubby is ready to this this. I am sure that one of these will make several meals for us so I am going to prepare part of it for the freezer. It is about 2-1/2 to 3 feet long and maybe 2 inches round. Hubby liked they way she told us she fries it and he wants to try some that way. I told him we would. There is very little that we fry in our house so I guess once in a while will not hurt.

    Maybe it will turn out similar to fried zucchini! That is the one fried thing I allow myself a couple times a month. It's not nearly as bad as eating a french fry and it's the only fried thing I eat. Enjoy!

I have never made my own pasta sauce, but I think I'm ready. I'll bet your house smells wonderful right now!
