This weekend I made a modified version of a popsicle recipe my bf posted to my fb wall. The original recipe called for kiwi, mango, and strawberry. I thought melon would be a better (and sweeter) flavor to add to the mix, so I subbed it for the strawberry. Plus I needed to find something to do with the watermelon I had cut up and frozen a couple of weeks ago.
The key to making this an AMAZING popsicle is choosing the best fruit! My mango and watermelon were superbly sweet and there was absolutely NO NEED FOR ADDED SUGAR. I started by peeling my fruit and cutting it into chunks (& defrosting my frozen watermelon balls).
I then pureed each fruit separately, rinsing the blender between fruits. The recipe suggested adding water if the fruit did not blend easily, but I had no problems with this as the fruit itself was juicy enough to make a nice smooth puree.
The mango was SOOOO good, it almost didn't make it to the popsicles, lol.
After the fruit was pureed to a smooth consistency I layered them into little dixie cups. I put kiwi first because it was the most tart of the three, so I would rather start with the tart then end on the sweet. You can layer them however you like.
Lastly I popped in wooden popsicle sticks and placed the cups in the freezer to freeze overnight.
These little babies are SO good! The best part about it is it's ALL FRUIT!
I had a bit of melon left over so I decided to add in some lime juice and chopped mint to make a few virgin frozen 'Watermelon Mojito' cups. Those were very refreshing as well. They might be my new go-to summer treat!
