Sunday lunch - parmesan veggie spiral

Over the last few months I have been on and off on Pinterest - warning if you are short on time do NOT go there!! It can be addictive and before you know an hour is gone..
On of the first recipes I found was for a great looking vegetable dish.

This is my version

Sauteed onions and garlic


Add sliced zucchini, potatoes, squash and tomatoes


Sprinkle on olive oil, thyme, pepper and salt and bake for 35 mins


After baking for 35 mins top with 1/2 cup of shredded parmesan cheese


Bake for another 25-30 mins


Sunday lunch: veggies and grilled salmon


This dish was a little time consuming and takes some planning but it is well worth it.

    OMG...I can kick you for always making the most delicious food! No, I would never kick you for real emoticon just being funny...darn, you just can cook so well and make the most delicious looking food. That bowl with those veggies looked like art. I mean, it is crazy how great you are with food! Okay...I am jealous emoticon

    That looks so good and I bet you could use whatever summer veggies you have on hand. I also bet it would be good cold as a extra on a green salad.
