Week 1 on paleo....and I am not Crazy!

I started on a Paleo Diet on Monday, and cut out bread, regular milk, cheese ect cold turkey...I am surprised to find it is working well for me. Its almost seems like since those foods arent an option, I dont need to worry about them....I did have a Greek Yogurt one day, but other than that, I really havent strayed from the diet ideals...
Here are some things I have been surprised by:
-I havent been snacky in the afternoons! That is fabulous since that was my biggest challenge.
-Having set "rules" is actually helping me! If its not in my list of things to eat, I just dont eat it...makes things really easy for me!
-My husband has totally gotten on board! emoticon He is pre diabetic, so going on a low carb lifestyle is what the doctor said to do, so he is trying hard...He actually ordered small hamburgers with no buns and a salad at lunch yesterday...If you knew my hubby, you would be impressed!
-I have started to willingly drink more water...not sure why, maybe just commiting to something has got me to really start to change my habits....
-I thought I would be absolutely craving bread by now, and thats not really an issue..even last night when we had spaghetti (squash), which usually I want garlic bread with it, I found it was not neccessary!

But our real challenge will be this weekend....Tonight we are going to a local hibachi place, that also has a huge buffet...I will try to stick to just habachi food, and any grilled fish they have...we go mostly because my daughter thinks she does better at tennis tournaments after having that for dinner...whatever works! I dont think the food is all that fabulous, so hopefully it wont be too much of a challenge. Also I am not a huge fan of cooking on the weekend...but trying new recipes is fun, so maybe I can try out new things...find snacky foods that are good...

I have enjoyed researching new recipes, but I think I need a food processor so I can make better sauces and grind up nuts is a must. Last night I made turkey meatballs with pecans instead of bread crumbs, and it tasted fairly good, but the pecans were just a little too chunky...I just couldnt get it to the right consistency. We had that with spaghetti squash, which was new for me too..not bad. I need to find better breakfasts too...scrambled eggs is getting a little old....

This is the first week my sodium levels have been with in range, so I must be doing something right!

Yesterday, I honestly thought I lost my mind...My perscription was running low, and I realized I could not refill it yet, as it was too early. So I really looked at my bottle and it said "One pill twice a day". I have been taking two pills twice a day...now I honestly thought I had just randomly upped my medication (its within the realm of possibility), so I called my doc to figure out what to do...I wasnt feeling any different, it was working at that dose, so they decided to just keep me at that level, and call in a new perscription at the dose I had been taking...I still couldnt figure out when I started doing this, but I figured it had to be in the last month since my previous month the refill had been fine....well, I found my bottle from the previous month, and sure enough, it said "two pills twice a day"! Good to know I am not as crazy as I thought....not sure what happened, so I plan to visit the pharmacy with both pill bottles and try to get to the bottom of it. My doctor is not the most available guy, he only has 3 office days, so if I have a perscription issue, I have to call his exchange on his off days, so it is really important this is all straightened out! Well, at least I have more pills waiting at the pharmacy, so I will not run out! Whew!

    I love my food processor! Don't know how I ever lived without it.

I'm really glad the extra pills you were taking didn't have a negative effect. That must have been scary when you realized it!

    On the breakfast front we make egg bakes - scrambled eggs with turkey sausage and veggies or I make egg bake cups with ham or bacon or proscuitto in the muffin pan, add the egg and some veggies and make til done or my DH likes sandwich eggs with ham or eye of round on a lettuce wrap/leaf.
