Vegan Pizza Day [yes, that's really a thing] was June 29 and I intended to make just one simple pizza but we really got into it. I made spelt dough and broke out the pizza stone and peel and went old school with it! Garry and I had a really good time and we ate pizza for days...
The first one was very simple---just a little sauce, Daiya mozzarella, fresh tomatoes, garlic and basil.
The second one was covered with vegan pimento cheese, fresh corn, tomatoes, chives and parsley.
The third one was covered with a bit of red sauce, mushrooms, onions, asparagus and peppers.
The fourth one [yep. we got up to 4!] was my favorite. Started with a bit of sauce, kale, white beans, artichoke hearts, and vegan Italian sausage. Yum!
Here they are as a family; never mind that we'd already violated one of them.
We made the crusts wafer thin, didn't use much cheese, and really didn't overeat and we had lots of glorious leftovers that we shared around.
And here's a dessert pizza that I made recently. It's all raw, with a date/walnut crust, topped with fig/chia jam and lots of beautiful fruit. It was so good and a feast for the eyes too!
