Wow! Actually, I think if half a cup of salad is a serving, I made it yesterday. I find that this challenge is similar to the whole foods thing I was doing. My calories are still under, but I'm not tired, and my appetite is still out of whack because I'm not feeling 100% and have been busy cleaning the house, which is an awesome work out when it's intense.
Anyway, this weekend, I plan on grilling all kinds of vegetables and some seafood. Probably shrimps, so my son can have some. I got some great Quiona burgers to grill too. I hope to do a lot of walking and hiking because I won't be going back to the gym until after Tuesday, but I don't feel like I've neglected my fitness minutes with all the housework. I hope the camp site has a gym; sometimes they do, which seems off, but what the heck.
I weighed myself when I went to the doctor on Tuesday, and I am about the same. It's funny how since I've been focusing on fitness minutes, I don't remember exactly how long I have weighed this much. I used to angst about plateaus; now, this whole process is far less pressured and way more enjoyable.
Well, the little master summons me for milk and cookies.
