My kids have decided that they want to eat exactly what Momma eats, which is really cool and will make our breakfasts and lunches soooo much easier plus it will be so much healthier for them AND it will help keep me accountable. Now I just need to go back to the store and buy even more strawberries, blueberries and bananas!
If they keep it up, we'll go through about 32 strawberries and 200 blueberries every morning and again at lunch time along with 4 bananas and 4 cups of spinach (or 4 carrots) at lunch time!
As it is, they snack on bananas, strawberries, mangoes and pineapple constantly. This will get them a little more on the veggie side and if I start adding a bit more protein to the lunch shake them it will help my two youngest get plenty of protein. (They are not meat eaters.)
On another note, I'm experimenting with cucumber chips! The first batch I made from an online recipe with vinegar, salt and dill. I didn't like that one very much. It was too much like pickles and I'm not a big pickle fan. The only reason I gave it a try is because I liked those salt and vinegar chips I tried one time. Now I'm trying some with ranch flavoring and I'll try a few with BBQ next! Hopefully, I'll like at least one of them. We don't buy chips very often but occasionally we all want chips, so I'm hoping this will help with those cravings (plus I have an excess of cucumbers!)
