Day 29: The Real ME and Following Through...

Yesterday, I decided that I would do my best at combating laziness. I said that I would try a different recipe each day to keep me in a standing position instead of sitting on my bed or couch with eyes glued to the television. So, I searched the Sparkrecipe website for a chicken dish.

Chicken enchiladas caught my eye, but I noticed that I did not have all the ingredients for any of the recipes mentioned. But I did not give up. No! Instead I decided to concoct my own. I decided that since I did not have corn tortillas, I could use my flour ones. I know they have more calories, but I could use less than one recipe called for and conquer that issue. The next obstacle was that I did not have taco seasoning or green chilies. I did, however have medium salsa. That is a staple in my home. So, I had a substitution for that ingredient. I also decided since my family loves spicy food, I would add hot sauce to the mix for a delicious variety. And one extra addition, cream of mushroom soup to make the thickening sauce.

Now I have to play with this recipe because in the end it came out a little like soup. Who am I kidding? It was soup! But it was delicious! So the next time I will use less water when boiling my chicken and I know it will be close to what I would like it to be; casserole, not soup.

I discovered I enjoy playing around with recipes. Why should I follow the recipes given? I should always give my own twist to it and make it my own. After all, I know what my family enjoys and what should be exchanged or kept. When i am cooking, I do not want to make a separate meal for them and me. We all should be able to enjoy the creation and the healthiness it provides.

I have found it to be like a game. I look at the calories and see how I can enhance the flavor without adding to the calories. Exchange something to bring it down, but add to the flavor and enjoyment of the dish. My goal, in addition to not being lazy, is to create flavorful meals that enhance my new lifestyle and amaze my family. I want to be able to provide delicious food that provides low calories and high amounts of nutrients. It can be done and I will prove it to myself and my family.

I look forward to following through with this promise today as I look for another recipe to alter and make it my own. Thanks Sparkpeople and Sparkrecipes. You have created a chef monster!
