While I am not using the Microwave 24/7, I am using it here and there to make quick healthy snacks/meals when the urge to splurge comes around. Can you believe that I rarely used the Microwave for healthy meals? I always thought you used it for three things.. TV dinners, Popcorn and heating leftovers.
Take potatoes for instance... While they are not as nutritional as the sweet potato (I'm still debating on that!) I have been making my own 'Pockets' version at home and you know what ..its gooood.
Potato + Fresh Spinach + Low Fat Cheddar = Delicious meal!
