Having a very productive Monday...

I hope everyone had a great Fourth of July Weekend. I did, it was so fun. I wasn't very healthy though. emoticon I decided today I would really buckle it down and get back on track.

Mondays have been prep days for me lately. Today I did devotionals, cleaned my house, went grocery shopping, and am in the process of food prepping for the week right now. It's nice to get everything organized. I chopped and sliced celery, cucumbers, and carrots. I'm making quinoa as I type, and, I chopped and spun romaine lettuce for salads. ( I will try to upload some photos.) I love having cucumbers, carrots, and celery ready and on hand now. I either eat them with a little hummus or salsa. Or I make a healthy dip with greek yogurt and salsa mixed. Salsa is my must have ingredient lately. I even use it in my tuna with a tbsp. of sour cream. It may sound strange, but, it is AH-mazing. I found this little trick when I ran out of mayo and searched my fridge for a substitute. I figured I love ceviche so I would give it a try. I actually like it better than mayo now and its like half the calories! Win! I have 2 different types of hummus in my fridge right now too. I've made a deal with myself and have decided not to buy any chips for awhile. Sorry husband! Even if they are organic yellow corn chips I cannot be trusted with them. I have started using the cucumbers, celery, carrots as a healthy alternative. This will end up saving me hundreds of calories. Plus its really good.

I'm doing a mini cleanse of sugar and alcohol. I've over indulged in them for too long now. I know I will feel so much better giving them up for a few weeks. I will probably be blogging about sugar cravings soon so sorry in advance if I sound whiny and cranky LOL...

And salsa is so good! What kind do you prefer?

    Oooh! Everything looks soooo tasty!! Good for you! I have also realized this past week that I cannot be trusted when there's junk food in the home. I had a bad holiday weekend with ice cream. *sigh* So for a hot weather treat, I bought frozen juice bars that are only 80 calories each. I know my family will bring some more ice cream into the home but perhaps my juice bars will help me resist the bad stuff. Good luck with your mini cleanse. I know you're going to do great!

  I recently tried quinoa for the first time! Yummy! I was introduced to hummus last year and couldn't believe what I was missing out on for sooooo many years! Loved reading about your healthy snacks. Gave me some ideas! Keep up the good work!
