Open face broiled sandwiches

Friday night I played a fun pickup game of softball. It's amazing how quickly game skills come back when you concentrate on them for a few minutes. Soon the time got away from me and it was nearly 8pm! By that point, it was time to make dinner and everyone was clamoring for it! I turned my leftovers into chic open face sandwiches that no one would guess were leftovers! Problem solved! Plus, with my leftover dip from the 4th of July, I had unique toppings ready to serve with them. Even though it was warm and muggy, operating the broiler for a brief 10 minutes did not heat up the house much, either. I've got to remember to do the open face sandwiches more often!
OPEN FACE SANDWICH W/ SLICED ROMA TOMATO, CRUMBLED FETA AND SHREDDED MEXICAN CHEESE. Top with salt, black pepper, CILANTRO, PARSLEY or AVOCADO. (I recycled the Pea Dip.)
OPEN FACE SLICED BUTTON MUSHROOMS, DICED ONION, SLICED BLACK OLIVES AND CRUMBLED FETA. Might have had a sprinkle of shredded mozz on there too. Top with salt, black pepper, drizzle of balsalmic vinegar. (I recycled the onion dip on the side.)
After playing softball, the perfect accompaniment to our dinner was, of course, to watch a game of the FIGHTIN' PHILS (PHILLIES)!
So far this season my favorite baseball game that I caught a whiff of (tend to watch just an inning or two at a time) was a grand slam by the Yankees a couple weeks ago. I love the Phillies, but I appreciate good plays the best!
