Since I'm now poor after all the vet bills, I'm working my way through the pantry trying to use what I already have (supplemented with quick and cheap trips to the farmers' market and grocery store). This has lead to some creativity in my recipes for this week but I think it's gonna be awesome!
Lentil Barley Soup - Lentils and barley from the pantry, mushrooms from the supermarket, canned tomatoes, last of the homemade veggie broth. It's pretty tasty! I love that you can throw just about anything into a pot and get delicious soup an hour later.
Israeli Couscous Salad - Couscous cooked in veggie broth with spinach, tomatoes from the farmers' market, lemon juice, olive oil, and some herbs. I'll stuff it into hollowed out beefsteak tomatoes for lunch this week.
Chocolate Chip Scones - They're still baking, but the batter is delicious (the joys of vegan baking - no salmonella risk in the batter!) and the house is starting to smell really good. I already had all the ingredients other than soy creamer (and now I have no idea what to do with the other half of that since I don't drink coffee).
So scones and yogurt for breakfasts, couscous for lunches, and probably soup and salad for dinners. Gonna be a good week!
