The other day I saw this recipe on SP : http://recipes.sparkpeople.com
2515103 and had to make it..... with my own twist of course.
When looking at recipes I usually go with only the ones that contain ingredients I already have or that I will actually use. I also can't help but changing things and hardly ever measure when I am putting my heart into foods. (I've been trying to more now that I realize the need for paying attention to calories.). I feel that recipes are a starting place for a work of art. My suggestion for anyone cooking is to have fun and experiment.
I didn't have the pasta it called for but whole wheat rotini works just as well plus I appreciate the texture more. I only had about an ounce of Feta left and the recipe called for 4 so I mixed what I had left in and then went searching in the fridge. I had mozzarella pearls and my mouth started watering so I had to add them. While I was searching I also saw green and red pepper slices that I had left over from something else and thought they would work lovely into the pasta. As I was finishing up I kept thinking that there was something missing and then it hit me, ARTICHOKE HEART! This dish would not be proper without artichoke heart. It was a delicious side to my Fourth of July meal.
AW! Leftovers! What to do, what to do? Eat them. This pasta easily becomes the perfect entre when you add shrimp or chicken. This recipe is now one of my favorites and will become my "go-to" meal when I am in a crunch.
