Thai Style Chicken

Ingredients

1 tbsp coconut oil
3 scallions, chopped
3 garlic cloves
1 can light coconut milk
1/4 cup dried figs
1/4 cup raisins
1/4 cup honey
2 tbsp tahini
1/4 cup chopped fresh basil
2 tbsp curry powder
1 tbsp dried ginger
2 cups green beans
1 1/2 lb chicken thighs

Protein: 24.9g

Heat onions and garlic in coconut oil until translucent. Add coconut milk, dried fruits, spices, chicken, and veggies. Cook until chicken is almost done, then add tahini, honey, and the herbs and spices.

Serving Size: 6 one cup servings.
