Rice Salad


4 cups prepared brown rice
1 can chick peas, drained and rinsed
3 cloves garlic
3 medium scallions
1/4 cup olive oil
1/2 cup lemon juice
1/4 cup fresh dill
1/4 cup fresh parsley
4.5 oz feta cheese
1/2 cup roasted red peppers
salt and pepper to taste

Prepare rice and allow to cool. Rinse chick peas and toss with rice. In a food processor, combine olive oil, herbs, lemon juice, garlic, salt, and pepper to taste. Chop feta, scallions, and roasted peppers, mix into rice mixture. Gently toss the dressing from the food processor, mixing thoroughly.

Serving Size: Makes 8 servings.
