Had my 4th of July menu planned out. Breakfast (check) that's where it ends. After breakfast and doing a couple of things DH announces he is taking me out for Mexican food for a late lunch (which means supper would be leftovers from lunch). I had planned on a chicken avocado sandwich with a side of cucumbers and an orange for lunch and for dinner it was going to be grilled salmon and asparagus.
I can say that the Mexican food was exceptionally good and I stayed within my calorie range, but fell short on protein. What I did was eat 1/4 of a chicken quesadilla, followed by 1 (of 3) seafood enchiladas. Ate 1/4 c guacamole, about 2 T of refried beans and the shredded lettuce with tomato garnish with lemon. Thank goodness for portion control. DH spotted a piece of chocolate cake that he would share with me...so yes we brought it home for later. We are not much for cocktails (did enough of that in our younger years), but today we were honoring my MIL who passed a year ago. Our tradition is to make a toast with a cocktail.....had a Captain Morgan with diet coke.
Having been flexible with my plans I tracked every morsel of food and beverage.....I not only enjoyed the day, but patted myself on the back for how well I did.
One day down and a million more to go LOL.
