Simple is better.

I lost another pound today! I have discovered lately that simple is better. My food plan is simple and my activity is very simple. It doesn't have to be complicated (for me at least).
I hate to cook, but I try to avoid processed foods as much as possible. I absolutely hate frozen, prepackaged meals. My sister likes them and it works for her weight loss plan but I am just not satisfied by them. I love vegetables, especially raw vegetables. I do eat some meat but not a lot. I try to stick to the idea that half your plate should be filled with fruits or veggies. This works for me. A little protein, a little carbs. and the rest fruits and veggies. This way you have a large, satisfying plate of food that doesn't feel like diet food at all!
Below are pictures of my lunch and dinner from yesterday. I thought they looked so pretty and colorful that I would take pics.
Lunch was greens picked fresh from the garden, kale and swiss chard. I steamed them and they were chilled. I topped them with a tomato, hard cooked egg, salt-free seasoning and Hidden Valley Low fat Ranch dressing...mmmm good! Avocado would have been good too, but I didn't have one.
Dinner is shredded chicken breast cooked with taco seasoning and salsa. Topped with coleslaw (my homemade low fat dressing) and served on soft corn tortillas. I love coleslaw on everything! Such an enjoyable way to get the green, crunchy vegetables in for the day.

    Good for you! Yes, I agree, simple is better for me as well. If it takes too much thinking, I become overwhelmed. I have always been a thinker, and sometimes I would get lost because I went to deep into a subject that I would just get lost and back off. So I have found that if I keep things simple, I have better success.

    Keep up the great work. One pound at a time. :-)

    Me too! I like to eat healthy but I hate to cook or spend time preparing food. Keeping it simple is the way to go. Those meals look delicious :)

    eating healthy is so much easier in the summer, isn't it? I look forward to summer eating. During July and August my daughter and I live at our summer lake house. My husband and son only come up on the weekends because they work. My daughter and I love this because we find it easier to eat healthy without the "boys" around! We love to grill chicken and just have a salad or veggies or a little sliced tomato for dinner. This kind of simple meal would not fly if the other members of the family were here. The healthy eating also prompts us to get out and exercise more than we already do. Your simple meals may be enjoyed by me and my girl very soon!

    I have no problem sharing my food ideas with everyone but I don't have recipes. I just throw together what ever I happen to have on hand. My coleslaw dressing is 1/4 cup low fat mayo, 1/4 cup rice vinegar, salt and pepper to taste and your choice of sweetener to taste. I like it sweet and tangy. I also add creamed horseradish but I know some people don't like it.I add this to one bag of coleslaw mix and that's it.
    The chicken tacos where a rotisserie chicken breast, shredded, a little taco seasoning and a couple of tablespoons of fresh salsa. Warm corn tortillas and coleslaw on top.

    Wonderful post and beautiful photos of your lunch and dinner. We're the same when it comes to coleslaw. I LOVE LOVE LOVE coleslaw! haha! And the same when it comes to not eating much meat. Try it with cherry tomatoes and sliced black olives. emoticon
