I lost another pound today! I have discovered lately that simple is better. My food plan is simple and my activity is very simple. It doesn't have to be complicated (for me at least).
I hate to cook, but I try to avoid processed foods as much as possible. I absolutely hate frozen, prepackaged meals. My sister likes them and it works for her weight loss plan but I am just not satisfied by them. I love vegetables, especially raw vegetables. I do eat some meat but not a lot. I try to stick to the idea that half your plate should be filled with fruits or veggies. This works for me. A little protein, a little carbs. and the rest fruits and veggies. This way you have a large, satisfying plate of food that doesn't feel like diet food at all!
Below are pictures of my lunch and dinner from yesterday. I thought they looked so pretty and colorful that I would take pics.
Lunch was greens picked fresh from the garden, kale and swiss chard. I steamed them and they were chilled. I topped them with a tomato, hard cooked egg, salt-free seasoning and Hidden Valley Low fat Ranch dressing...mmmm good! Avocado would have been good too, but I didn't have one.
Dinner is shredded chicken breast cooked with taco seasoning and salsa. Topped with coleslaw (my homemade low fat dressing) and served on soft corn tortillas. I love coleslaw on everything! Such an enjoyable way to get the green, crunchy vegetables in for the day.
