Tuesday's Weight:

130.8 no clothes
131.7 thin clothing

Well I was right. I gained a pound by eating that burger on Monday. Haven't exercised yet, but it's only the 4th. I did make 2 cups worth of vegan cheese this morning. I will make another 2 cups when I taste the final result of this one, with modifications if needed. Why? Because my yogurt is too starchy to eat. With the cheese you cook it (and it calls for tapioca starch which is already in my yogurt) and the starch taste goes away. So unfortunately, the yogurt did not turn out this time around. I added chia seeds to thicken it up yesterday and it worked.... So next time I want to eat straight yogurt I will just put chia seeds, no gelatine or tapioca starch. I had to strain all the gelatine out since it created tapioca-like stringy things. If I'm making cheese I will not put any chia seeds, although, the chia seeds add lots of nutrients. I just want clear white cheese, not cheese with black specks. Anyways, yes the cheese is meltable..... and very gooey. And it tastes like a mild mozzarella with a hint of nuttiness, probably due to the almond milk I used for the yogurt and the chia seeds. I tasted it right after cooking while it was still liquid and it tasted cheese-like. I was surprised. Another mistake gone potentially good. It's cooling right now, then I have to put it in the fridge to firm it up. I did have to cook it for 20 extra min to get the right gooeyness. I can't wait to taste it today though! Meltable Almond Milk Cheese. Yum. Looks slightly beige though. It's a very plain cheese though, just like mozzerella. Oh well, at least I will be eating some cheese again even though it's not "real". Til Saturday.
