New Month New Challenges

July means for my part of the country that we are in to real summer weather. For the east coast that means high temperatures, daily thunderstorms. My appetite needs encouragement during the hot days of summer. Salads are a definite mainstay in summer. Salads are easy to prepare. There is little need to be in a kitchen hot with pots boiling or the heat from the oven grill when all the mixing for a salad come from the fridge. My salads are usually made with just a few ingredients. Red leaf lettuce , green leaf lettuce and romaine is a mixture I love. Next maybe a few grape tomatoes. Then I might add a brown mushroom or two. With a few pices of fruit chopped up and sprinkled on top my salad starts to look eatable. Depending on what I've already eaten I may add a hard boiled egg to my salad. My dinner salad might be sprinkled with a few grams of tuna or grilled salmon. Salads keep me going and cool during the hot days of summer. emoticon
